Mahi-Mahi With Roasted Butternut Squash
Servings 2 People
Ingredients
- 12 oz pkg Coleson’s Catch Mahi-Mahi Fillets
- 1-1/2 c Butternut Squash cleaned and diced
- 1/2 c Yellow Onion diced
- 1/4 tsp Thyme
- 1/4 tsp Allspice
- 1/4 tsp Black Pepper
- Enough chicken broth to cover
- A bit of butter
- A bit of milk
Instructions
- Sauté the onion in butter until tender.
- Add the squash, spices, and broth.
- Cover and simmer until tender.
- Blend in a blender or food processor.
- Return to stove and add enough milk to bring to the desired thickness.
- Bring to a simmer and serve with the Mahi-Mahi cooked as you prefer.
Notes
Serve with a grain and a salad.
