Mahi-Mahi with Cucumber Salsa
Servings 2 People
- 12 oz Coleson's Catch Mahi-Mahi
- 1/4 c Cucumber diced, peeled & seeded
- 1/4 c Green Bell Pepper diced
- 1/4 c Red Onion diced
- 1/4 c Tomato diced
- 1/4 tsp Chili Flakes crushed
- 2 Tbsp Cilantro chopped
- Salt and Pepper
- Mix all ingredients, except the Mahi-Mahi, and chill overnight.
- Cook the fish in any style you prefer.
- When done, top with salsa and serve with lemon.
- Good with salad or rice.
