Baked Sole with Marinara and Smoked Mozzarella

Ingredients
- 12 oz Coleson's Catch Sole Fillets
- 1 c. smoked Mozzarella
- Marinara sauce:
- 2 c. canned tomatoes diced
- 2 Tbsp. olive oil
- 1/2 c. Onion chopped
- 1 Tbsp. Italian seasoning
- 2 Tbsp. fresh basil chopped
- Salt and Pepper
Instructions
- Sauté onions until translucent.
- Add remaining Marinara Sauce ingredients and simmer for 30 minutes.
- Place Sole in baking dish.
- Top with Marinara Sauce and Mozzarella.
- Bake 15-30 minutes at 350°.
