Vinaigrette recipe:
1/2cupbalsamic vinegar
1/2cuppure olive oilnot extra virgin
1Tbsp. Shallotsminced
1Tbsp. garlicminced
1Tbsp. Basilchopped
1/4cupmoist sun dried tomatoeschopped
1Tbsp. Dijon mustard
Salt & Pepper
Instructions
Mix vinaigrette recipe ingredients 24 hours before using.
Marinate the mussels in the vinaigrette for 1-2 hours.
Then assemble the salad by tossing together with the remaining ingredients.
