Instructions
In a large bottom pan, (enough to accommodate the fillets side by side) boil the water with the onion, lemon and seasonings.
Add the fillets and simmer for 4-6 minutes depending on thickness.
Remove and cool.
Notes
The broth can be saved for future poaching or used to make soup.
