Mahi-Mahi With Roasted Butternut Squash

Ingredients

Coleson’s Catch Mahi-Mahi Fillets

c
Butternut Squash
cleaned and diced
1/2
c
Yellow Onion
diced
1/4
tsp
Thyme
1/4
tsp
Allspice
1/4
tsp
Black Pepper
Enough chicken broth to cover
A bit of butter
A bit of milk
Instructions
Sauté the onion in butter until tender.
Add the squash, spices, and broth.
Cover and simmer until tender.
Blend in a blender or food processor.
Return to stove and add enough milk to bring to the desired thickness.
Bring to a simmer and serve with the Mahi-Mahi cooked as you prefer.
Notes
Serve with a grain and a salad.
