Mahi-Mahi With Roasted Butternut Squash

Servings 2 People

Ingredients

  • 12 oz pkg Coleson’s Catch Mahi-Mahi Fillets
  • 1-1/2 c Butternut Squash cleaned and diced
  • 1/2 c Yellow Onion diced
  • 1/4 tsp Thyme
  • 1/4 tsp Allspice
  • 1/4 tsp Black Pepper
  • Enough chicken broth to cover
  • A bit of butter
  • A bit of milk

Instructions

  • Sauté the onion in butter until tender.
  • Add the squash, spices, and broth.
  • Cover and simmer until tender.
  • Blend in a blender or food processor.
  • Return to stove and add enough milk to bring to the desired thickness.
  • Bring to a simmer and serve with the Mahi-Mahi cooked as you prefer.

Notes

Serve with a grain and a salad.
