Swiss Cheese, Red Onion and Champagne Vinegar

Ingredients

  • 1 cup Swiss cheese diced (1/2 inch)
  • 1/3 c Red Onion diced 
  • 1/4 Cornichons  chopped, gherkins
  • 1 Tbsp Champagne Vinegar
  • 2 Tbsp olive oil
  • 1 tsp Stone Ground Mustard
  • Salt and Pepper

Instructions

  • Combine and toss immediately--should be used right away.
