Spicy Eggplant:

Eggplant
diced

Instructions
Marinate Swordfish.
For eggplant, sauté all ingredients in 1/4 c. olive oil until completely cooked, approximately 20 minutes.
Add 1/4 to 1/2 c. chicken stock.
