Slipper Lobster Tail with Roasted Butternut Squash

Ingredients

  • 1 pkg Coleson's Catch Slipper Lobster Tail split
  • 2 Tbsp Butter melted
  • 1/4 tsp Nutmeg
  • Salt and Pepper
  • 2 c Butternut Squash peeled & diced
  • 2 Tbsp Butter melted
  • 1/2 tsp Nutmeg

Instructions

  • Toss diced squash with salt, pepper, nutmeg and butter.
  • Put on a sheet pan large enough to be a single layer.
  • Bake at 400°F until golden brown about 20 minutes.
  • Sprinkle salt, pepper and nutmeg on the lobster meat and brush with butter.
  • If possible cook lobster tail over an open flame or bake with the squash except that it will not take 20 minutes more like 10-12.
  • Serve with side salad.
