- 3 c Sweet Potato cooked diced
- 1/3 c white wine vinegar
- 2/3 c olive oil
- 1 Tbsp Shallots chopped
- 2 Tbsp Tarragon fresh chopped
- 1/2 Honey
- Salt and Pepper

Instructions
- Make a dressing by whisking all ingredients together other than the potatoes.
- Pour over the still warm potatoes and chill.
