Ingredients
- 1 c spelt
- 2 c Chicken Broth
- 1/2 c Onion diced
- Salt and Pepper
- Seasoning you like
- Extras-greens tomatoes, bell or other peppers, etc.

Instructions
- Boil the onion in the seasoned chicken broth, add the rinsed spelt, and simmer until tender.
- My experience with cooking times varies wildly. The first couple of times you cook it, leave plenty of time in case it takes longer.
Recipe Notes
Spelt is not delicate like some types of rice--stir it all you want. I add the extras near the end of the cooking time to cut down on sticking.
