Escovich of Catfish

Ingredients: 1 onion 1 red bell pepper 1 green bell pepper 2 hot peppers 2 Tbsp. thyme 1 c. chicken stock
Cooking Instructions: Flour the Catfish and saute until very crispy. Set in baking dish. Saute 1 thinly sliced onion, 1 red bell pepper, 1 green bell pepper and 2 hot peppers. Pour over Catfish and sprinkle with 2 teaspoons thyme and 1 c. chicken stock. Cover and bake for 20 minutes.
