- 1 pkg Coleson’s Catch Ahi Tuna thawed
- 1 c Fresh Cranberries
- 1/3 c Sugar
- 1 Tbsp Ginger grated
- 1 Tbsp Orange Zest

Instructions
- In a medium-sized saucepan, melt the sugar with just enough water to dissolve.
- Bring to a boil, simmer until it starts to thicken.
- Add the ginger, zest and cranberries – stir and cook until the skins break.
- Take off the heat. Chill.
- Salt and pepper the Ahi Tuna, sear in a lightly oil pan-cook to medium or less.
- Slice the tuna and fan on a plate with the cranberries either underneath or on top.

Serving suggestions: Serve with quinoa and top with chopped mint.
