  • 16 oz Head off Shell on Shrimp 26/30, thawed
  • 1 Tbsp Pickling spice
  • ½ tsp Salt
  • 1 c water
Roasted Pepper Dipping Sauce
  • 1/3 c Mayonnaise
  • 1/3 c Roasted Red Pepper
  • 1 Roasted Jalepano Pepper
  • 3 cloves Roasted Garlic Large Size
  • 1 tsp Lime Juice
  • Salt and Pepper

Shell on Shrimp
  • 16 oz Head off Shell on Shrimp 26/30, thawed
  • 1 Tbsp Pickling spice
  • ½ tsp Salt
  • 1 c water
Roasted Pepper Dipping Sauce
  • 1/3 c Mayonnaise
  • 1/3 c Roasted Red Pepper
  • 1 Roasted Jalepano Pepper
  • 3 cloves Roasted Garlic Large Size
  • 1 tsp Lime Juice
  • Salt and Pepper
Instructions
  1. Bring water, pickling spice and salt to a boil; let it simmer for 3 minutes.  
  2. Add the shrimp, cover and bring back to a boil and remove from heat.
  3. Let set for 3 minutes and drain.  Rinse in cool water.
  4. When cool, peel, leaving tail on and chill.
Rosted Pepper Dipping Sauce
  1. Puree all ingredients and chill for 2 hours. Serve with shredded lettuce and lime wedges.

  • 12 oz pkg Coleson’s Catch Cod Fillets thawed
  • 2 c Quince peeled, cored, diced
  • ¼ c Sugar
  • ⅓ c Pomegranate Seeds
  • water

  • 12 oz pkg Coleson’s Catch Cod Fillets thawed
  • 2 c Quince peeled, cored, diced
  • ¼ c Sugar
  • ⅓ c Pomegranate Seeds
  • water
Instructions
  1. In a saucepan, cover the quince with water then add sugar.  
  2. Boil until tender; remove lid to reduce the liquid a bit.  It will not fall apart like an apple; it will stay square.  Chill.
  3. Poach the cod in salted water and pat dry; serve with the chilled quince and sprinkle with pomegranate seeds.  
My Thoughts on Quince
  1. I like the plain quince flavor but other flavors that can be added during the cooking of the quince are orange zest, grated ginger, or raisins.  The concept is similar to serving applesauce with a pork chop - if you are a purest, you may like it plain, but many like to doll it up.  I find quince fun to play around with.  Chopped parsley or a mint sprig is a pretty garnish .  Side salad is good side dish.

  • 1 Tbsp Pickling spice
  • 1 c water
  • 1 tsp Salt
  • 1 in Lemon cuthalf
Instructions
  1. Boil water with spices, salt, and lemon. Add the shrimp and stir, cover and remove from heat.
  2. Let set for 10 minutes and strain. Cover with ice and cold water to chill.
  3. Carefully remove the shell leaving the tail intact.
  4. Serve with cocktail sauce, tartar sauce, salsa, or any of your favorite flavors.
  5. This process will produce a crisp, clean texture and flavor.

  • 16 pcs Firm Pear diced, the same size as scallops
  • 1 tsp Lemon Juice
  • 2 Tbsp Honey
  • ¼ c water
  • ¼ tsp Allspice
  • 1 tsp Shallots chopped
  • Salt and Pepper to taste

  • 16 pcs Coleson’s Catch Scallops thawed
  • 16 pcs Firm Pear diced, the same size as scallops
  • 1 tsp Lemon Juice
  • 2 Tbsp Honey
  • ¼ c water
  • ¼ tsp Allspice
  • 1 tsp Shallots chopped
  • Salt and Pepper to taste
Instructions
  1. Mix together everything except scallops & pears.
  2. Marinade scallops and pear with the mixture for an hour.
  3. Skewer, alternating Scallops & Pears.
  4. Cook over an open flame or you may opt to sauté until heated through.
