Mussels on the Half Shell with Apricot and Ginger

Ingredients
- 12 pcs Coleson's Catch Kono Mussels on the Half Shell
- 1 c Diced Apricot
- 2 Tbsp grated fresh ginger
- 2 Tbsp Diced Green Onion
- 1 Tbsp Soy Sauce
- 1 Tbsp Sesame Oil
- 2 Tbsp Toasted sesame seeds
- Salt and Pepper
Instructions
- Toss everything together except the Mussels.
- Top the mussels with the mixture.
- Heat either in the oven on a sheet pan or on an open flame.
- Heat until warmed through-10-15 minutes.
Notes
Serve as a starter or a main course with tossed salad.

Coho Salmon Cooked in Foil with Soy Sauce and Sesame Oil

Ingredients
- 1 pkg Coleson’s Catch Coho Salmon Fillets
- 2 Tbsp Soy Sauce
- 2 Tbsp grated fresh ginger
- 2 tsp chopped garlic
- 1 tsp Sesame Oil
- 2 tsp Toasted sesame seeds
- 1/4 c sliced green onion
- 1/4 c Sake or Dry White Wine
- Black Pepper
Instructions
- Brush foil with a little sesame oil.
- Place salmon skin side down on the foil and top with all the other ingredients with green onion being last.
- Wrap so the seam is on top.
- Cook over an open flame, 15 minutes or so depending on heat source.
- Serve with Bulgur.

Tilapia With Bok Choy And Water Chestnuts

Ingredients
- 12 oz pkg Coleson's Catch Tilapia Fillets
- 2 c. Bok Choy chopped (stalks separated from leaf, using both)
- 1 c. Onion diced
- 2 tsp. Fresh Ginger grated
- 1 tsp. garlic chopped
- 1 tsp. Soy Sauce
- 1/2 tsp. Sesame Oil
- 1/2 tsp. Toasted sesame seeds
- 1/4 c. Carrot grated
- 2 Tbsp Water Chestnuts chopped
- Plain oil
Instructions
- In lightly oiled saute pan, cook the onion and Bok Choy until soft.
- Add all other non-fish items and saute lightly, leaving the bok choy leaves just wilted.
- Cook the Tilapia your favorite way and top with the cooked greens.
Notes
Suggested side dishes would be brown rice, bulgur, or quinoa.
