Scalloped Sweet Potato with Shrimp
Ingredients
- 1 Lb. Coleson's Catch 26/30 EZ Peel Shrimp
- 3 c Sweet Potato peeled & sliced
- 1 Yellow Onion sliced
- 1 c Mushrooms sliced
- 1/2 c Sherry
- 4 Tbsp Butter
- 1/2 tsp Nutmeg
- 1 c Parmesan cheese shredded
- 1 c Breadcrumbs
- 1 qt Half and half
Instructions
- Peel shrimp. Sauté the onions, but don't let them brown; set aside.
- Sauté the mushrooms until they are soft.
- Add the sherry and nutmeg, and simmer until the liquid is almost gone; set aside.
- Heat the half and half to a simmer; set aside.
- In a medium glass or ceramic dish, layer the potatoes, onions, mushrooms, shrimp, breadcrumbs, and Parmesan repeatedly until the potatoes are gone, finishing with a layer of potatoes.
- Pour over the half and half, covering the top layer, and cover the dish with its lid.
- Bake at 350 degrees F. for 1 hour, then test the potatoes.
- If they are tender, sprinkle with breadcrumbs and Parmesan and dot with butter.
- Turn heat to 400 degrees F. and cook, uncovered, until brown.
Calamari Steak with Bacon and Sweet Potato
Calamari Steak with Bacon and Sweet Potato

Ingredients
- 1 pkg. Coleson's Catch Calamari Steaks thawed
- Flour
- 8 strips Bacon
- 1 c Sweet Potato peeled, diced cooked - I like it roasted in the oven but it can be boiled
- 1/2 c Onion diced
- Salt and Pepper
- 1/4 c Green Onion chopped
Instructions
- Cut the bacon in to 1 inch strips. Saute until crisp.
- Strain the bacon out of the fat and set aside.
- Saute onion in the bacon fat and strain out.
- Dry the calamari steaks in a paper towel. Season with salt and pepper.
- Dust with flour.
- Saute Calamari steak in the bacon fat very lightly - only a minute or two on each side as it tends to get tough if over cooked.
- Set the Calamari steak on the serving plate.
- Toss the hot sweet potato with the bacon, sauteed onion and green onion. Adjust seasoning.
- Pour mixture over Calamari and serve.
Notes
Suggested side dishes would be sliced tomato, hot broccoli or salad.
Tuna with Sweet Potato and Tangerine
Tuna With Sweet Potato And Tangerine

Ingredients
- 12 oz pkg Coleson's Catch Yellowfin/Ahi Tuna
- 1-1/2 c Sweet Potato diced
- 1/3 c Red Onion diced
- 2 Tbsp white wine vinegar
- 2 Tbsp light oil
- 2 Tbsp Honey
- 1 tsp chopped fresh tarragon or 1/4dried tarragon
- 2 tangerines-peeled and diced
Instructions
- Boil or steam the sweet potato al dente and cool.
- Toss the other non-fish ingredients together and chill for a couple of hours.
- Cook the tuna medium-rare, either over an open flame or seared in a hot pan.
- Use the potato mixture as either a base or a topping.

Side dish suggestion--green salad.

Sweet Potato Swordfish Bake

Ingredients
- 1 pkg Coleson's Catch Swordfish
- 1 c Sweet Potato peeled diced
- 1/2 c Celery diced
- 1/2 c Onion diced
- 1/2 tsp Thyme
- olive oil
- Salt and Pepper
Instructions
- Toss all ingredients except the swordfish and spread on a sheet pan.
- Bake at 400F for 15 minutes.
- Season the swordfish and add to the sheet pan; continue to cook until the swordfish is done and the sweet potato tender, approximately 10 minutes.
