Pink Salmon with Snap Peas and Shitake Mushrooms

  • 1/2 pkg Coleson's Catch Pink Salmon or 16 oz
  • 3/4 c Snap Peas
  • 1/2 c Shitake Mushrooms
  • 1 Tbsp Canola oil
  • 1/2 c Red Onion diced
  • 1/4 c Carrot grated
  • 1 tsp garlic chopped
  • 1/4 c Chicken Broth
  • 1 Tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1/2 tsp Sesame Seeds toasted
  • Salt and Pepper

  • 1/2 pkg Coleson's Catch Pink Salmon or 16 oz
  • 3/4 c Snap Peas
  • 1/2 c Shitake Mushrooms
  • 1 Tbsp Canola oil
  • 1/2 c Red Onion diced
  • 1/4 c Carrot grated
  • 1 tsp garlic chopped
  • 1/4 c Chicken Broth
  • 1 Tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1/2 tsp Sesame Seeds toasted
  • Salt and Pepper
Instructions
  1. Cook the salmon any style.
  2. Sauté the onion until al dente.
  3. Add the mushrooms and toss until tender.
  4. Add the garlic and toss until cooked but not brown.
  5. Add the chicken broth, snap peas, carrot, soy sauce, sesame oil and seeds - simmer until peas are bright green but still crisp.
  6. Adjust seasoning if needed.
Recipe Notes

Serve salmon & snap pea mixture with rice or bulgur.

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 c. Shitake Mushrooms sliced
  • 1 Tbsp garlic chopped
  • 1 Tbsp Canola or Peanut Oil
  • 2 Tbsp Ginger grated
  • 1/4 c. Soy Sauce
  • 2 Tbsp Sesame Oil
  • 1/2 c. Chicken Stock
  • 1 Tbsp Corn Starch mixed with water

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 c. Shitake Mushrooms sliced
  • 1 Tbsp garlic chopped
  • 1 Tbsp Canola or Peanut Oil
  • 2 Tbsp Ginger grated
  • 1/4 c. Soy Sauce
  • 2 Tbsp Sesame Oil
  • 1/2 c. Chicken Stock
  • 1 Tbsp Corn Starch mixed with water
Instructions
  1. Sauté the mushrooms and garlic in the oil; add the ginger, soy sauce, sesame oil and chicken stock.  Bring to a boil. 
  2. Whisk in the cornstarch mixture to thicken. 
  3. Broil the Tilapia then top with the sauce.

  • 12 oz pkg Coleson's Catch Tilapia Fillets thawed, seasoned with salt and pepper
  • 1 c. Asparagus cut nicely on the diagonal 
  • 1/2 c. Shitake Mushrooms thinly sliced
  • 1/4 c. Red Onion diced
  • 1/2 c. Yellow Bell Pepper diced
  • 1 Tbsp garlic chopped 
  • 1/3 c. Chicken Broth
  • Salt and Pepper
Cook Time 5 minutes

  • 12 oz pkg Coleson's Catch Tilapia Fillets thawed, seasoned with salt and pepper
  • 1 c. Asparagus cut nicely on the diagonal 
  • 1/2 c. Shitake Mushrooms thinly sliced

Instructions
  1. In a sauce pan bring the chicken broth, garlic, pepper, onion and mushrooms to a boil, add the asparagus and Tilapia, cover and simmer for 5 minutes.
  2. Serve with a salad or with rice.
