Spinach Salad with Lemon and Basil Dressing and Olive Tray

Ingredients
- 4 c Spinach Leaves
- 2/3 c Cucumber sliced
- 2/3 c quartered artichoke hearts
- 2/3 c Feta cheese dressing:
- 1/3 c red wine vinegar
- 2/3 c olive oil
- 1 Tbsp garlic chopped
- 3 Tbsp Basil chopped
- 3 Tbsp Lemon Zest
- 1 tsp Salt
- 1/2 tsp Black Pepper
Instructions
- Dressing:
- Mix all ingredients. Will keep chilled for weeks.
Notes
A side dish of olives will provide more garnishes. Your favorite deli will have many to choose from. Select at least three.
Mozzarella with Basil
Mozzarella with Basil
Servings 2 People
Ingredients
- Mozzarella
- 10-15 basil leaves
- 2 cloves garlic
- 1 Tbsp red wine vinegar
- 1 Tbsp olive oil
- Salt & Pepper
Instructions
- Blend the ingredients into a smooth paste and coat the cheese with it.
Notes
This can be used as the start of a great salad--toss with diced tomatoes, cucumbers, olives, artichoke hearts, etc.
Additional Comments:
The easiest method of preparation is with a mortar and pestle because of the small amount. It tends to get lost in a blender or food processor, unless you have one of those nifty tiny food processors.
Tomato Basil Dressing

Ingredients
- 2/3 c Grape Tomatoes
- 6 basil leaves
- 2 tbsp red wine vinegar
- 1/2 tsp Salt
- pepper
- 1/4 c olive oil
- 4 cloves garlic
Instructions
- Mix all items and blend in a blender or food processor.
- Dressing can be served hot or cold.
- If served hot, heat the dressing in a sauté pan and add the salad to the pan and toss; then put on the plate.
Tomato Basil Vinaigrette

- 1 c tomatoes diced
- 1 Tbsp chopped garlic
- 2 Tbsp chopped fresh basil
- 1/4 c red wine vinegar
- 1/2 c olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Puree in a blender or food processor.
