Pomegranate and Coconut Milk Ladyfinger Parfait
Servings 2 People
Ingredients
- 3 egg yolks
- 1/3 c Sugar
- 2/3 c Heavy Cream
- 2/3 c mascarpone
- 2/3 c sweetened coconut milk
- 1/4 c pomegranate juice
- 1 Tsp rum
- 18 ladyfingers
- Fresh pomegranate kernels
- Fresh Mint
Instructions
- Beat the yolks and sugar until thoroughly mixed. Whip the cream.
- Fold the mascarpone into the cream and then the yolks into it.
- Mix the coconut milk, pomegranate juice and rum.
- Dip the ladyfingers in the liquid and layer into parfait dishes alternating with the egg mixture.
- Garnish with fresh pomegranate kernels and mint.
- Put in the refrigerator and let it set for 8 hours.

Ingredients
- 12 oz pkg Coleson’s Catch Tuna Steaks
- Marinade:
- 1/4 c pomegranate juice
- 1 Tbsp chopped garlic
- 1/4 c chopped fresh basil
- 1/2 tsp grated lemon zest
- 1/4 tsp Salt and Pepper
Instructions
- Mix marinade ingredients. Marinate tuna for at least an hour, turning occasionally. Grill.

- 12 oz Coleson’s Catch Tuna Steaks
- Marinade:
- 1/4 c Lemon Juice
- 1/4 c pomegranate juice
- 1/4 tsp Salt and Pepper
- 1/2 c Red Onion diced
- 1/4 c water
- 1/4 c chopped basil
Instructions
- Thinly slice the tuna and marinate for 24 hours.
- Garnish with pomegranate kernels when in season.
- Chopped apple and or oranges would be good additional ingredients.
Notes
I like it with crumbled blue cheese and sweet baguette.

Braised Swordfish with Pomegranate and Pears
Servings 4 People
Ingredients
- 4 pieces Coleson's Catch Swordfish Steaks
- 1/2 c Green Onion diced
- 1/3 c pomegranate juice
- 1/3 c red wine
- 1 Tbsp Orange Zest
- 1/4 c chopped fresh mint
- 1/4 c Honey
- 1/2 tsp Allspice
- 2 c peeled sliced firm pear
- Salt and Pepper
Instructions
- Salt and pepper the swordfish and sear in hot oil to brown both sides.
- Place into a glass-baking dish and top with the pear slices.
- Bring the remaining ingredients to a boil and pour into baking dish, cover and bake for 20 minutes in a 400 degree oven.
