Mussels on the Half Shell with Corn, Mint and Red Bell Pepper

Ingredients
- 12 pcs Coleson's Catch Kono Mussels on the Half Shell
- 1/2 c cooked corn
- 1/2 c Red Bell Pepper Diced
- 2 Tbsp chopped mint
- 2 Tbsp Diced Shallot
- 2 Tbsp Lime Juice
- 1 tsp olive oil
- Salt and Pepper
Instructions
- Toss everything together except the Mussels.
- Top each mussel with a heaping of the mixture.
- Warm either on a sheet pan in the oven or over an open flame - heating until warmed through, about 10-15 minutes.
Notes
Serving Suggestions: Serve as a starter or as main course with a tossed salad.
Mahi-Mahi with Corn and Black Bean Salsa
Mahi-Mahi with Corn and Black Bean Salsa

Ingredients
- 1 pkg Coleson's Catch Mahi-Mahi
- 1/2 c cooked corn
- 1/2 c Cooked Black Beans
- 1/4 c Red Bell Pepper Diced
- 1/4 c Green Onion Chopped
- 2 Tbsp Lime Juice
- 2 Tbsp chopped cilantro
- 1/2 tsp Red Chilies Crushed
- Salt and Pepper
Instructions
- Toss everything together except the Mahi-Mahi.
- Chill for 1 hour or longer.
- Cook the Mahi-Mahi in any method desired.
- Place Mahi-Mahi on a bed of salsa or pour salsa over it.
Notes
Serve with a salad - the salsa is great on greens.
