  • 12 oz pkg Tilapia fillets thawed & seasoned with salt and pepper
  • ½ c red seedless grapes cut in half
  • 2 Tbsp Shallots minced
  • 1 tsp lemon thyme leaves
  • 2 Tbsp cider vinegar
  • ¼ c Chicken Broth
  • ¼ c Heavy Cream
  • Salt and Pepper

  • 12 oz pkg Tilapia fillets thawed & seasoned with salt and pepper
  • ½ c red seedless grapes cut in half
  • 2 Tbsp Shallots minced
  • 1 tsp lemon thyme leaves
  • 2 Tbsp cider vinegar
  • ¼ c Chicken Broth
  • ¼ c Heavy Cream
  • Salt and Pepper
Instructions
  1. In a saute pan, simmer the tilapia, shallots, vinegar and chicken broth until the broth is almost gone.
  2. Add the cream and grapes and simmer until the cream starts to thicken.
  3. Adjust seasonings.
  4. Serving suggestions: a green vegetable or salad.

Tilapia Fillets with Marsala and Flavored Butter

  • 12 oz pkg. Coleson's Catch Tilapia Fillets
  • 1/4 c. Marsala wine
  • Flour for dusting fillets
  • 6 Tbsp. Butter
  • Salt and Pepper to taste1 Lemon juiced
  • 1 tsp. Parsley finely chopped
  • 2 Tbsp. Butter softened

  • 12 oz pkg. Coleson's Catch Tilapia Fillets
  • 1/4 c. Marsala wine
  • Flour for dusting fillets
  • 6 Tbsp. Butter
  • Salt and Pepper to taste1 Lemon juiced
  • 1 tsp. Parsley finely chopped
  • 2 Tbsp. Butter softened
Instructions
  1. Combine the last 3 ingredients to make the flavored butter. 
  2. Mix flour with salt and pepper and dust both sides of the fish. 
  3. Melt the butter in a hot pan and sauté the fillets. 
  4. When the first side is golden brown, add the Marsala wine. 
  5. Turn the fish over and continue to cook until this side is golden brown.
Recipe Notes

Serve warm with dollops of flavored butter.

  • 2 Fresh Beets with greens attached
  • 1 Tbsp. balsamic vinegar
  • 1/2 Onion finely diced
  • 1/2 c. Chicken Stock
  • 1/2 tsp. Thyme
  • Salt and Pepper to taste

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 2 Fresh Beets with greens attached
  • 1 Tbsp. balsamic vinegar
  • 1/2 Onion finely diced
  • 1/2 c. Chicken Stock
  • 1/2 tsp. Thyme
  • Salt and Pepper to taste
Instructions
  1. Peel the beets. Slice thinly. Chop the stems and remaining greens.
  2. Place all the ingredients in a casserole dish with the fish placed on top.
  3. Cover and bake for 20 minutes at 350°.
  4. Serve with rice.

  • Salsa Ingredients:
  • 3/4 c. corn
  • 1/4 c. Red Bell Pepper diced
  • 1/4 c. Green Onion sliced
  • 1 Tbsp Vinegar
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Fresh Cilantro chopped

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 3 Tbsp Cajun seasoning*
  • Salt and Pepper
  • Salsa Ingredients:
  • 3/4 c. corn
  • 1/4 c. Red Bell Pepper diced
  • 1/4 c. Green Onion sliced
  • 1 Tbsp Vinegar
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Fresh Cilantro chopped
Instructions
  1. Mix the salsa ingredients together and chill over night. 
  2. Sprinkle salt and pepper on both sides of the Tilapia fillets and generously coat both sides with Cajun seasoning. 
  3. Saute to a golden brown and top with the salsa.

  • 1 Sweet Potato peeled and grated
  • 2 Tbsp Fresh Ginger grated
  • 1/4 c. Green Onion chopped
  • 1/2 c. Flour
  • Salt and Pepper

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 Sweet Potato peeled and grated
  • 2 Tbsp Fresh Ginger grated
  • 1/4 c. Green Onion chopped
  • 1/2 c. Flour
  • Salt and Pepper
Instructions
  1. Season the fish with salt and pepper. 
  2. Toss other ingredients and press on top of the filets.
  3. Place in a baking dish and bake at 400 for 20 minutes or until sweet potatoes are tender.
