Think summertime and it will make you smile. Let your mind wander. Ahh, good times, indeed! This time of the year more than any other gives me a sense of not having enough time for all the things I would like to do--or wouldn't want to miss out on. With time on my mind, I would like to point out the thing that is most impressive about the entire Coleson's Catch seafood assortment--its purity of flavor. Each item can be simply cooked with no fuss. What has been mentioned on more than one occasion, when I have prepared Coleson's Catch seafood for someone, is that it will of course taste good because a professional chef is cooking. Truly, the product doesn't need a professional chef to make it taste good. Why? Because it stands on its own.

Most of us either have a summer vegetable garden or know someone with one. It might be just a tiny plot with two tomato plants, a pepper bush, a zucchini vine, and some basil. For many it is the full spectrum--with rows of corn, eggplant, carrots, beets, and lettuces. The sun-warmed, vine-ripened possibilities we can cook or eat fresh are heavenly!

One of the easiest ways to enhance a plain piece of fish or meat is to top it with compound butter (see recipe linked below). If you make a quarter pound and keep it in the refrigerator, it will make for the quickest possible flavor enhancer ever. You can also make the butter even more flavorful by incorporating herbs. A little of this flavored butter goes a very long way--an important point for the calorie counters.

During the summer, we often do not want to heat up the house with cooking, which is why the barbeque is used a lot. However, many households don't cook outside, so I'll give you a few open-flame ideas using the more hearty and robust fish, the kind most suited to open-flame cooking.
