1 cup Swiss cheese, diced (1/2 inch)
1/3 c Red Onion, diced
1/4 c Cornichons (gherkins), chopped
1 Tbsp Champagne Vinegar
2 Tbsp Olive Oil
1 tsp Stone Ground Mustard
Salt and Pepper
Combine and toss immediately--should be used right away.
