Ingredients: 1 8 oz package Coleson’s Catch Oyster Meat 4 peeled sliced potatoes, keep in cold water until ready 2 c half and half Salt and pepper 2 c Italian seasoned breadcrumbs 2 eggs whisked with 1/3 c milk 1 c flour Oil to sauté with 3/4 c Parmesan cheese
Cooking Instructions:
Bread the oysters: Drain them and pat dry. In the order of flour, egg, breadcrumb, dip the oysters and set on a plate until they are all done.
Sauté breaded oysters in oil until golden brown. Put the potatoes, half and half, salt and pepper in a saucepan and bring to a simmer. The liquid should just cover the potatoes. When the potatoes are tender, place half of the potatoes in a baking dish; place the oysters as the next layer, then add the rest of the potatoes. Sprinkle with a few breadcrumbs and the Parmesan cheese. Bake at 400° for 20 minutes or until golden brown.
