Ingredients: 1 8 oz package of Coleson’s Catch Oyster Meat 2 c mixed diced root vegetables (any combination of potatoes, regular or sweet, turnip, carrot, celery root, and rutabaga) 1/2 c diced onion 6 cloves of garlic Olive oil 1/2 tsp thyme 3 bay leaves 1 c chicken broth 3 c milk Roux Salt and pepper
Cooking Instructions: Spread out the root vegetables, onions and garlic on a sheet pan. Sprinkle with salt, pepper, thyme and olive oil. Bake at 400° for 20 minutes, stirring a couple of times. Everything should be golden brown. Put in a saucepan with the bay leaves and chicken broth. Simmer until tender. Add milk; as it comes to a simmer, add roux to thicken. Add oyster meat and heat through. Adjust seasonings. Serving Suggestions: Some people will want to chop the garlic, not wanting to find it whole in the stew. It would not be offensive since it is roasted and the harshness is gone, but the idea of a whole clove of garlic bothers some people. Additional Comments: Roux: melt butter and stir in flour to make a paste.
