Ingredients: 1 8 oz package of Coleson's Catch Oyster Meat 1/2 c diced yellow onion 1 Tbsp diced jalapeno 1 c diced potato 1/2 c kernel corn 1 c chicken broth 3 bay leaves 3 c milk Butter and flour for roux Salt and pepper
Cooking Instructions: Roux: melt butter and stir in enough flour to make a paste.
In a saucepan, sauté the onion and jalapeno in a little butter. Add the potatoes, corn, broth and bay leaves, and simmer until the potatoes are tender. Add milk; when it comes to a simmer, add roux to thicken. Add oyster meat and heat through. Adjust seasoning.
Serving Suggestions: Make more roux than you need and keep on hand.
