Ingredients: 2 packages Coleson Catch® Oyster Meat with the liquid (16 oz. total) 1/2 c diced onion 2 Tbsp butter 2 c heavy cream 2 bay leaves 1/2 tsp salt and pepper
Cooking Instructions: In a saucepan, melt butter and sauté the onion, do not brown. Add the oyster meat with the juice and the bay leaves. Simmer for 15 minutes. Remove the bay leaves and puree in a blender or food processor. Return to the saucepan and add the heavy cream, salt and pepper. Simmer for 5 minutes. Taste the stew. It is either a perfectly rich delight to you or a bit heavy. According to your taste, adjust the richness. It can be lightened up by adding milk, water or a broth. Serving Suggestions: Oyster crackers or sour dough bread is a must. Additional Comments: For a more traditional stew don’t puree the oysters. Both processes have its followers. The pureed version is a green gray color which some don’t like. The whole oyster version is snowy white but many don’t like the whole oyster experience. I enjoy them both. Although the ingredients are the same the end results are completely different.
